Finger biscuits, or ladyfingers, are delicate, sponge-like cookies perfect for desserts like tiramisu or trifles. Making them at home is easier than you think—here’s a basic recipe and tips to ensure success.
Ingredients: You’ll need 3 eggs (separated), 60g sugar, 70g all-purpose flour, 1 tsp vanilla extract, and a pinch of salt.
Steps:
1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
2. Mix egg yolks with half the sugar until pale and thick. Stir in vanilla.
3. Whip egg whites with the remaining sugar and salt until stiff peaks form. Gently fold the yolk mixture into the whites, then sift in flour. Fold gently to avoid deflating the batter.
4. Pipe the batter into 10cm finger shapes on the sheet, leaving space between them.
5. Bake for 10–12 minutes until golden. Cool on a wire rack.
Variations: For chocolate flavor, add 2 tbsp cocoa powder to the flour. For zest, mix in lemon or orange rind with the yolks.
