First, gather ingredients: 1 whole chicken (cut into pieces), 2 onions, 3 carrots, 3 celery stalks, 4 garlic cloves, 1 bay leaf, 1 tsp thyme, salt, pepper, and 6 cups of broth (chicken or vegetable). Olive oil and butter are essential for browning.
