Guoba Three Fresh (地三鲜), a beloved Northeast Chinese staple, celebrates the harmony of three humble ingredients: potatoes, eggplants, and green peppers. Here’s a simple guide to recreating this flavorful dish at home.

Step 1: Prep the Ingredients

Peel and cut 1 potato into 1cm-thick strips; soak in water to remove excess starch. Slice 1 eggplant into similar-sized strips and toss with 1 tsp salt to drain bitterness. Halve 1 green pepper and remove seeds, then cut into bite-sized pieces.
