Dry-braised green beans (干煸豆角) is a beloved Sichuan dish, celebrated for its crispy-tender texture and bold, savory flavor. Here’s a detailed guide to mastering it at home.

Ingredients: 500g fresh green beans, 100g ground pork (optional), 3-4 dried chilies, 2 cloves garlic (minced), 1 tbsp ginger (minced), 2 tbsp cooking oil, 1 tbsp light soy sauce, 1 tsp dark soy sauce, 1 tsp sugar, and a pinch of Sichuan peppercorn powder.

Steps:

1. Prep the Beans: Trim the green beans and snap into 3-inch pieces. Pat them dry thoroughly to ensure crispiness.

2. Blanch (Optional but Recommended): Boil beans for 2-3 minutes until slightly softened, then drain and pat dry again. This reduces frying time.

3. Deep-Fry: Heat oil in a wok over medium-high heat. Fry the beans in batches until the skin wrinkles and they turn golden brown (about 5-7 minutes). Remove and drain excess oil.
