Kimchi, Korea’s iconic fermented dish, is celebrated for its spicy, tangy flavor and probiotic benefits. While recipes vary by region, here’s a versatile guide to making classic napa cabbage kimchi.

Ingredients: 1 large napa cabbage (cut into chunks), 1/4 cup coarse salt, 1 radish (julienned), 4 cloves garlic (minced), 1 tbsp ginger (grated), 3-4 tbsp gochugaru (Korean chili flakes, adjust for spice), 1 tbsp fish sauce (or soy sauce for vegetarian), 1 tbsp sugar, 1 scallion (chopped), and 1 carrot (julienned).

Steps:
