Braised Pork Belly: A Culinary Masterclass

Braised pork belly, or *Hong Shao Rou*, is a beloved Chinese dish renowned for its melt-in-your-mouth texture and rich, savory-sweet flavor. Mastering this recipe requires patience and a few key steps to achieve perfection.

Ingredients: 500g pork belly (cut into 2cm cubes), 3 tbsp soy sauce, 2 tbsp dark soy sauce, 2 tbsp sugar, 1 tbsp Shaoxing wine, 1 cinnamon stick, 2 star anise, 1 piece ginger (sliced), 3 cloves (smashed), and cooking oil.

Steps:

1. Prep: Soak pork in cold water for 30 minutes to remove excess blood. Pat dry.

2. Sear: Heat oil in a wok over medium-high heat. Brown pork cubes on all sides until golden. Set aside.

3. Sauté Aromatics: In the same wok, stir-fry ginger, cloves, and star anise until fragrant.

4. Simmer: Return pork to the wok. Add soy sauces, sugar, and Shaoxing wine. Stir to coat evenly.

5. Braise: Pour in enough hot water to cover the pork. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5–2 hours until tender.

6. Reduce Sauce: Uncover, increase heat slightly, and simmer for 5–10 minutes until the sauce thickens into a glossy glaze.

Serving: Serve hot with steamed rice or mantou. The dish pairs beautifully with blanched bok choy for a balanced meal.
