How to Make Tea Eggs: A Comprehensive Guide

Tea eggs, a beloved Chinese snack, are flavorful, protein-rich, and easy to prepare. Here’s a detailed guide to mastering this classic dish.

Ingredients: 6-8 eggs, 4 black tea bags, 5 star anise, 3 cinnamon sticks, 2 bay leaves, 3 tbsp soy sauce, 2 tbsp soy sauce, 1 tbsp sugar, 1 tsp salt, and 4 cups water.

Steps:

1. Boil eggs: Place eggs in a pot, cover with cold water, and bring to a boil. Cook for 7 minutes, then transfer to an ice bath to peel easily.

2. Prepare broth: In a larger pot, add water, tea bags, star anise, cinnamon, bay leaves, soy sauce, dark soy sauce, sugar, and salt. Simmer for 15 minutes to infuse flavors.

3. Infuse eggs: Gently crack peeled eggs all over with a spoon (this helps absorb flavor). Submerge them in the broth, ensuring they’re fully covered.

4. Simmer and steep: Bring the mixture to a gentle boil, then reduce heat to low. Cover and simmer for 1 hour. Turn off the heat and let the eggs steep in the broth for at least 4 hours (or overnight for richer taste).

5. Serve: Remove eggs, slice in half, and enjoy warm or cold. The longer they steep, the more flavorful they become.

Tips: For a savory twist, add a piece of dried tangerine peel or 1 tbsp of Shaoxing wine to the broth. These tea eggs make a perfect snack or side dish for any meal!
