Ingredients:

500g pork ribs, 1 medium taro (peeled and cubed), 3 garlic cloves (minced), 1 ginger slice, 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sugar, 1 cup water, and chopped green onions for garnish.

Steps:

1. Prepare the ribs: Rinse ribs, pat dry, and marinate in soy sauce, oyster sauce, and sugar for 15 minutes.

2. Sear the ribs: Heat oil in a pot, sear ribs until golden, then set aside.

3. Cook taro: In the same pot, sauté garlic and ginger until fragrant. Add taro cubes, stir-fry for 2 minutes.

4. Simmer: Return ribs to the pot, add water, and bring to a boil. Reduce heat, cover, and simmer for 30–40 minutes until ribs are tender and taro is soft.

5. Thicken (optional): For a thicker sauce, mix 1 tsp cornstarch with 2 tbsp water, stir into the pot, and cook until slightly reduced.

6. Garnish and serve: Sprinkle with green onions. Enjoy hot with rice!
