How to Make Delicious Shiitake Mushroom and Chicken Thighs

Shiitake mushroom and chicken thighs are a flavorful, nutritious duo, perfect for weeknight dinners or family feasts. Here’s a simple yet versatile recipe to guide you.

Ingredients:

- 4 chicken thighs (bone-in, skin-on for extra richness)

- 8-10 shiitake mushrooms (stems removed, caps sliced)

- 3 cloves garlic (minced)

- 1 tbsp soy sauce

- 1 tbsp oyster sauce

- 1 tsp honey or sugar

- 1 cup chicken broth

- 1 tbsp vegetable oil

- Sesame seeds and green onions (for garnish)

Steps:

1. Prep the chicken: Pat thighs dry, season with salt and pepper. Heat oil in a large skillet over medium-high heat; sear chicken skin-side down until crispy (5-7 mins). Flip and cook 3 more mins, then transfer to a plate.

2. Sauté mushrooms: In the same skillet, add garlic and sliced mushrooms. Cook until mushrooms release liquid and turn golden (4-5 mins).

3. Simmer: Return chicken to the skillet. Mix soy sauce, oyster sauce, honey, and broth; pour over. Cover, reduce heat, and simmer for 15-20 mins until chicken is tender and internal temp reaches 165°F (74°C).

4. Finish: Uncover, increase heat slightly to thicken the sauce (1-2 mins). Garnish with sesame seeds and green onions. Serve hot with rice or steamed veggies.

Variations: Add ginger for warmth, or a splash of rice wine for depth. For a healthier version, remove chicken skin before searing. This dish balances umami, sweetness, and savory notes, making it a crowd-pleaser every time!
