How to Make Scallion Oil Buns: A Step-by-Step Guide

Scallion oil buns, a beloved Chinese breakfast staple, are soft, fluffy, and fragrant with savory scallion oil. Here’s a simple recipe to recreate them at home.

Ingredients: For the dough, you’ll need 300g all-purpose flour, 3g active dry yeast, 15g sugar, 150ml warm water, and a pinch of salt. For the scallion oil, mix 4 chopped scallions, 50ml neutral oil, 10g salt, and 5g five-spice powder.

Steps:

1. Make the dough: Dissolve yeast and sugar in warm water. Let it sit for 5 minutes until frothy. Combine flour and salt in a bowl, then pour in the yeast mixture. Knead into a smooth dough, about 10 minutes. Cover and let it rise in a warm place for 1 hour, or until doubled in size.

2. Prepare the scallion oil: Mix all scallion oil ingredients until well combined.

3. Shape the buns: Punch down the risen dough and roll it into a rectangle. Spread the scallion oil evenly, leaving a 1cm border. Roll it up tightly like a swiss roll. Cut into 6-8 equal pieces.

4. Proof and steam: Place the buns on a parchment-lined steamer, leaving space between them. Let them proof for 20 minutes. Steam over high heat for 15 minutes. Turn off the heat and let them sit for 5 minutes before opening the steamer.

Enjoy these warm, fluffy buns as a delightful breakfast or snack!
