Braised pork knuckle, or *zhao zhou zi*, is a beloved Chinese delicacy renowned for its tender meat, rich flavor, and glossy sauce. Achieving perfection requires patience and technique, but this guide simplifies the process into manageable steps.

Ingredients: Start with a 1.5 kg pork knuckle, 5 slices of ginger, 3 scallions, 2 star anise, 1 cinnamon stick, 3 tbsp soy sauce, 2 tbsp dark soy sauce, 1 tbsp Shaoxing wine, 1 tbsp sugar, and 4 cups water.

Steps:

1. Prepare the knuckle: Rinse and pat dry. Score the skin in a diamond pattern and blanch in boiling water for 5 minutes to remove impurities. Drain and set aside.

2. Sauté aromatics: Heat oil in a pot over medium flame. Sauté ginger, scallions, star anise, and cinnamon until fragrant.

3. Braise the knuckle: Add the knuckle, soy sauces, wine, and sugar. Stir to coat evenly. Pour in water, ensuring the knuckle is submerged.
