First, gather your ingredients: 2 ripe pineapples (peeled, cored, and diced), 1 cup of sugar (adjust to taste), 2 tablespoons of lemon juice, and 1 teaspoon of vanilla extract (optional). The lemon juice enhances flavor and acts as a natural preservative.

Start by cooking the diced pineapples in a large pot over medium heat. Stir occasionally until they soften and release their juices, about 15–20 minutes. Add the sugar and lemon juice, then increase the heat to medium-high. Bring the mixture to a boil, then reduce the heat to low and let it simmer. Skim off any foam that forms on the surface.
