Ingredients: Fresh bream (1kg), scallions, ginger, garlic, soy sauce, light soy sauce, dark soy sauce, cooking wine, sugar, salt, vegetable oil, water.

Steps:

1. Prep the fish: Clean the bream, score diagonal cuts on both sides, and pat dry. Rub with salt and cooking wine to remove any fishy odor.

2. Sear the fish: Heat oil in a wok over medium-high heat. Pan-fry the bream until golden brown on both sides (about 3-4 minutes per side). Set aside.
