First, prepare the dumpling wrappers. You can use store-bought ones or make a simple dough with 2 cups all-purpose flour and ¾ cup warm water, kneaded until smooth. Let it rest for 30 minutes.

For the filling, popular options include pork and chives (mix 300g ground pork with 1 cup chopped chives, 1 tbsp soy sauce, 1 tsp sesame oil, and a pinch of salt) or vegetarian alternatives like cabbage and mushrooms. Ensure the filling is well-drained to prevent sogginess.

To assemble, place a tablespoon of filling in the center of a wrapper, moisten the edges with water, and fold into a half-moon, pressing firmly to seal. You can create pleats for a traditional look.
