Next, incubate the yogurt to allow fermentation. Maintain a consistent 40-45°C (104-113°F) for 6-12 hours. You can use a yogurt maker, an oven with the light on, or a warm spot like a turned-off microwave with a towel. The longer it ferments, the tangier the yogurt will be.
