Ingredients:

- 200g ripe durian flesh (pitted and mashed)

- 200g heavy cream (chilled)

- 150g digestive biscuits, crushed

- 100g cream cheese (softened)

- 70g sugar

- 3 gelatin sheets (soaked in cold water)

Steps:

1. Base: Mix crushed biscuits with 50g melted butter. Press into a springform pan and chill for 20 minutes.

2. Cream Layer: Whisk heavy cream until stiff peaks form. In another bowl, beat cream cheese and sugar until smooth. Add durian paste and mix well. Gently fold in the whipped cream.

3. Set: Melt gelatin sheets (drained) in a double boiler. Cool slightly, then fold into the durian mixture. Pour over the biscuit base.
