Ingredients:

- 6 egg yolks

- 3/4 cup sugar

- 1 1/3 cups mascarpone cheese

- 1 3/4 cups heavy cream

- 2 cups strong espresso, cooled

- 1/4 cup coffee liqueur (optional)

- 2 packages ladyfinger cookies (savoiardi)

- Unsweetened cocoa powder, for dusting

Instructions:

1. Prepare the Cream Mixture: Whisk egg yolks and sugar in a heatproof bowl until thick and pale. Set over a simmering water bath (double boiler), stirring constantly, until the mixture reaches 160°F (71°C). Remove and let cool slightly. Gently fold in mascarpone until smooth.

2. Whip the Cream: In a separate bowl, whip heavy cream to stiff peaks. Gently fold into the mascarpone mixture until combined.

3. Assemble the Tiramisu: Mix espresso and liqueur (if using) in a shallow dish. Quickly dip each ladyfinger into the liquid (don’t soak) and arrange a single layer in a 9x13 inch dish. Spread half the mascarpone mixture over the cookies. Repeat with another layer of dipped ladyfingers and remaining cream.

4. Chill and Serve: Cover and refrigerate for at least 4 hours (or overnight) to allow flavors to meld. Before serving, dust generously with cocoa powder.
