Chiffon Cake: A Step-by-Step Guide

Chiffon cake, known for its airy, cloud-like texture, is a beloved dessert that combines simplicity with elegance. Mastering it requires precision, but this guide breaks it down into easy steps.

Ingredients: For an 18cm pan, you’ll need 4 eggs (separated), 60g cake flour, 50g sugar (for meringue), 30g sugar (for batter), 40ml vegetable oil, 50ml milk, and ½ tsp vanilla extract.

Steps:

1. Prep: Preheat oven to 160°C. Sift flour; ensure egg whites are at room temperature.

2. Yolks: Whisk yolks with 30g sugar until pale. Add oil, milk, and vanilla, mixing well. Fold in sifted flour until smooth.

3. Meringue: Beat egg whites until foamy. Gradually add 50g sugar, beating until stiff peaks form.

4. Combine: Gently fold 1/3 of meringue into yolk batter to lighten it. Then fold in the remaining meringue in two batches, using a spatula to avoid deflating.

5. Bake: Pour batter into an ungreased pan. Tap the pan to remove air bubbles. Bake for 35-40 minutes until golden and a toothpick comes out clean.

6. Cool: Immediately invert the pan and let cool completely before removing.

Tips: Ensure no yolk contaminates egg whites for stable meringue. Sifting flour prevents lumps. Inverting the pan prevents collapse.

With its light crumb and delicate flavor, chiffon cake is a versatile base for fruits or frostings. Enjoy this timeless treat!
