How to Make Hearty Beef and Potato Stew

Beef and potato stew is a comforting, one-pot meal perfect for cold days. Here’s a simple yet delicious recipe to guide you.

Ingredients: 500g beef chuck (cut into cubes), 4 large potatoes (peeled and halved), 1 onion (chopped), 2 carrots (sliced), 3 garlic cloves (minced), 500ml beef broth, 2 tbsp tomato paste, 1 tsp dried thyme, salt, and pepper to taste. Oil for searing.

Steps:

1. Sear the Beef: Heat oil in a large pot over medium-high heat. Brown the beef cubes on all sides (about 5-7 minutes). Remove and set aside.

2. Sauté Aromatics: In the same pot, cook onions until soft (3-4 minutes). Add garlic, carrots, and tomato paste; stir for 1 minute until fragrant.

3. Simmer: Return beef to the pot. Pour in beef broth and thyme. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 hours until beef is tender.

4. Add Potatoes: Stir in potatoes and simmer for 20-30 more minutes, until potatoes are soft and the stew thickens.

5. Season: Adjust salt and pepper. Serve hot, garnished with fresh parsley if desired.
