How to Make Classic Chicken and Mushroom Stew

Chicken and mushroom stew is a comforting, hearty dish loved worldwide. Here’s a simple yet delicious recipe to guide you.

Ingredients: 1 whole chicken (cut into pieces), 200g dried shiitake mushrooms (soaked until soft), 1 onion (chopped), 3 garlic cloves (minced), 1 carrot (sliced), 2 bay leaves, 500ml chicken broth, 2 tbsp soy sauce, 1 tsp sugar, salt, pepper, and cooking oil.

Steps:

1. Prep: Soak mushrooms in warm water for 30 minutes, then slice. Pat chicken dry and season with salt and pepper.

2. Sear: Heat oil in a pot over medium-high heat. Brown chicken pieces on both sides (about 5 minutes), then set aside.

3. Sauté: In the same pot, sauté onion and garlic until fragrant (2 minutes). Add mushrooms and carrots, cook for 3 more minutes.

4. Simmer: Return chicken to the pot. Pour in broth, soy sauce, and sugar. Add bay leaves. Bring to a boil, then reduce heat to low. Cover and simmer for 40–50 minutes, until chicken is tender and flavors meld.

5. Finish: Discard bay leaves. Adjust seasoning with salt and pepper. Serve hot with rice or crusty bread.

This dish blends tender chicken, earthy mushrooms, and savory broth, perfect for cozy meals. Enjoy!
