Ingredients: 500g white fish fillets (like cod or tilapia), 1 cup all-purpose flour, 1 tbsp cornstarch, 1 tsp paprika, 1/2 tsp garlic powder, salt and pepper to taste, 2 eggs (beaten), 1 cup breadcrumbs (panko preferred), cooking oil for frying.

Steps:

1. Prep the Fish: Rinse fillets, pat dry, and cut into 2-inch pieces. Season with salt and pepper; let sit for 15 minutes.

2. Make the Coating: Mix flour, cornstarch, paprika, and garlic powder in a shallow dish. In another dish, beat eggs. Spread panko breadcrumbs on a third plate.

3. Coat the Fish: Dip each piece into flour (shake off excess), then egg, then breadcrumbs, pressing gently to adhere.

4. Cook: Heat oil in a pan to 350°F (175°C). Fry fish in batches for 3-4 minutes per side until golden and crispy. For a healthier version, air-fry at 400°F (200°C) for 10-12 minutes, flipping halfway.
