Mushroom paste, a savory and versatile condiment, elevates dishes from noodles to rice with its rich umami flavor. Here’s a simple guide to making it at home.
Ingredients: 500g fresh shiitake mushrooms (stems removed), 100g shallots (minced), 5 cloves garlic (minced), 3 tbsp soy sauce, 2 tbsp oyster sauce, 1 tbsp sugar, 1 tbsp sesame oil, 2 tbsp cooking oil, and a pinch of five-spice powder.
Steps:
1. Prepare Mushrooms: Clean mushrooms, pat dry, and roughly chop. Sauté in hot oil until golden, then set aside.
2. Aromatics: In the same pan, stir-fry minced shallots and garlic until fragrant.
3. Simmer: Return mushrooms to the pan. Add soy sauce, oyster sauce, sugar, and five-spice powder. Cook over medium-low heat for 10 minutes, stirring occasionally, until the mixture thickens.
4. Blend: Remove from heat, let cool slightly, then blend into a smooth paste. Stir in sesame oil.
5. Store: Transfer to a sterilized jar, refrigerate, and use within 2 weeks.
This homemade mushroom paste adds depth to stir-fries, dips, or even as a sandwich spread. Adjust spices to taste for your perfect umami boost!
