Chiffon Cupcakes: A Simple Step-by-Step Guide

Chiffon cupcakes, known for their light, airy texture and subtle sweetness, are a delightful treat. Here’s a concise guide to baking them perfectly.

Ingredients:

- 100g cake flour

- 80g granulated sugar (separate into 60g for batter and 20g for meringue)

- 3 eggs (separated into yolks and whites)

- 40ml vegetable oil

- 60ml milk

- 1 tsp vanilla extract

- ½ tsp cream of tartar (for stabilizing egg whites)

Steps:

1. Prepare dry ingredients: Sift cake flour with 60g sugar twice. Set aside.

2. Mix wet base: In a bowl, combine egg yolks, oil, milk, and vanilla. Whisk until smooth. Gradually add dry ingredients, mixing gently to avoid lumps.

3. Whip meringue: In a clean, grease-free bowl, beat egg whites with cream of tartar until foamy. Add remaining 20g sugar gradually, beating until stiff peaks form.

4. Combine folds: Gently fold 1/3 of the meringue into the yolk mixture to lighten it. Then, pour the yolk mixture into the remaining meringue, folding gently with a spatula until just blended (do not overmix).

5. Bake: Pour the batter into lined cupcake pans, filling each 2/3 full. Bake at 160°C (320°F) for 20–25 minutes, or until a toothpick comes out clean.

6. Cool: Let cupcakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
