How to Make Juicy Pork Buns: A Step-by-Step Guide

Making delicious, juicy pork buns at home is simpler than you think! Follow this comprehensive guide to create fluffy, flavorful buns that rival your favorite dim sum spot.

### Step 1: Prepare the Dough

Combine 500g all-purpose flour, 5g yeast, and 50g sugar in a large bowl. Gradually add 250ml warm water and knead into a smooth, elastic dough (about 10 minutes). Let it rise in a warm place for 1–2 hours until doubled in size.

### Step 2: Make the Filling

Finely chop 300g pork shoulder (a mix of lean and fat for juiciness). Sauté 2 minced garlic cloves and 1 grated ginger in 1 tbsp oil until fragrant. Add the pork, 2 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tsp sesame oil, salt, and pepper. Cook until the pork is no longer pink, then let it cool completely.

### Step 3: Shape the Buns

Punch down the risen dough and divide it into 12 equal portions. Roll each into a 15cm circle. Place 1–2 tbsp filling in the center, gather the edges, and pinch tightly to seal. Pleat the top for a traditional look. Place the buns on parchment paper, leaving space for expansion.

### Step 4: Proof and Steam

Let the shaped buns rise for 30 minutes. Steam them over high heat for 15–18 minutes. Turn off the heat and let them rest for 5 minutes before opening the lid—this prevents the buns from collapsing.

Serve warm with chili oil or soy-vinegar dip. Enjoy your homemade, melt-in-your-mouth pork buns!
