How to Make Purple Sweet Potato Mantou: A Complete Guide

Purple sweet potato mantou, a vibrant and nutritious twist on the classic steamed bun, are beloved for their natural sweetness and striking color. Here’s a simple, step-by-step guide to making them at home.

Ingredients:

- 200g steamed and mashed purple sweet potato

- 300g all-purpose flour

- 3g active dry yeast

- 30g sugar

- 180ml warm milk (≈40°C)

- A pinch of salt

Steps:

1. Prepare the dough: Dissolve yeast and sugar in warm milk; let sit for 5 minutes until frothy. Mix mashed purple sweet potato with flour and salt, then pour in the yeast mixture. Knead into a smooth, elastic dough (about 10 minutes).

2. First rise: Place dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1–1.5 hours, or until doubled in size.

3. Shape the mantou: Punch down the dough, divide it into 6-8 equal portions, and roll each into a smooth ball. Place them on parchment paper, leaving space for expansion.

4. Second rise: Cover the buns and let them rise again for 30 minutes.

5. Steam: Bring a pot of water to a boil. Arrange the mantou in a steamer, leaving gaps. Steam over high heat for 15–18 minutes. Turn off the heat and let them sit for 5 minutes before opening the lid to prevent shrinking.

Tips: For extra flavor, add a teaspoon of vanilla extract or black sesame seeds to the dough. Serve warm with honey or butter. These mantou are not only visually appealing but also packed with fiber and vitamins, making them a healthy treat for any time of day.
