Ingredients:

- 2 medium eggplants, sliced into ½-inch rounds

- 1/2 lb ground pork or chicken (or tofu for vegetarian)

- 2 cloves garlic, minced

- 1 tbsp soy sauce, 1 tsp sesame oil

- Salt, pepper, and a pinch of sugar

- 1/2 cup all-purpose flour

- 1 egg

- 1 cup water or beer (for extra crispiness)

- Oil for frying

Steps:

1. Prepare the filling: Mix ground meat, garlic, soy sauce, sesame oil, salt, pepper, and sugar. Set aside.

2. Soak eggplant: Lightly salt the eggplant slices and let them sit for 10 minutes to remove bitterness. Pat dry.

3. Make batter: Whisk flour, egg, and water (or beer) until smooth.
