Crystal shrimp dumplings, or *har gow*, are a dimpling staple prized for their translucent wrapper and plump, flavorful filling. Mastering them requires patience but yields impressive results.

Ingredients: For the wrapper, mix 100g tapioca starch with 50g wheat starch, a pinch of salt, and 120ml boiling water. Knead into a smooth dough, rest covered. For the filling, combine 200g peeled, deveined shrimp (chopped but slightly chunky), 50g bamboo shoots (julienned), 1 tsp soy sauce, ½ tsp sesame oil, ½ tsp sugar, and white pepper to taste. Add 1 tsp cornstarch and mix well.

Steps:

1. Make the wrapper: Divide dough into small balls. Roll each into a thin 8cm circle on a floured surface.

2. Fill and shape: Place 1 tbsp filling in the center. Fold dough over, pleating edges to seal into a half-moon. Ensure no air pockets.

3. Steam: Line a steamer with cabbage leaves. Place dumplings, spacing them apart. Steam over high heat for 5-7 minutes until wrappers turn translucent.

Tips: Keep dough covered to prevent drying. Use cold shrimp for a firmer texture. Serve immediately with soy sauce and chili oil.
