How to Make Homemade Liangpi: A Step-by-Step Guide

Liangpi, a beloved Chinese cold noodle dish, is renowned for its chewy texture and refreshing flavor. Making it at home is simpler than you think! Here’s a detailed guide.

Step 1: Prepare the Batter

Mix 1 cup of all-purpose flour with 2 cups of water, stirring until smooth. Let it rest for 30 minutes, then strain the mixture through a cheesecloth to remove gluten. Set the gluten aside (it can be steamed for another dish) and let the starchy liquid settle for 4–5 hours until the sediment separates from the clear water. Carefully pour out the top water and reserve the thick paste at the bottom.

Step 2: Cook the Liangpi

Grease a heatproof plate or steaming tray. Stir the starch paste thoroughly, then spread a thin layer on the tray. Steam over high heat for 2–3 minutes until the surface turns opaque and slightly wrinkled. Remove and let it cool completely. Repeat until all paste is used.

Step 3: Cut and Season

Once cooled, roll the liangpi and slice it into thin strips. For the classic sauce, mix soy sauce, vinegar, garlic, chili oil, sesame paste, and a pinch of sugar. Toss the noodles with the sauce, shredded cucumber, bean sprouts, and cilantro.
