Ingredients: 1 cup rice (preferably jasmine or short-grain), 4 cups water or chicken broth, 1 fresh crab (cleaned and chopped into pieces), 2 ginger slices, 1 scallion (chopped), salt, white pepper, and a dash of sesame oil.
Steps:
1. Prepare the Congee: Rinse rice thoroughly. In a pot, combine rice, water, and ginger. Bring to a boil, then simmer on low heat for 45–60 minutes, stirring occasionally, until the porridge thickens and the rice breaks down.
