A Guide to Making Perfect Chinese Youtiao (Fried Dough Sticks)

Youtiao, the golden, crispy fried dough sticks beloved in China, are a breakfast staple. While simple, mastering their texture—crunchy outside, soft yet chewy inside—requires key steps. Here’s a basic guide to get you started.

First, prepare the dough: Mix 500g all-purpose flour, 400ml warm water, 1 tsp salt, and 1 tsp baking powder. Knead into a smooth, elastic ball (about 10 minutes), then let it rest, covered, for 1–2 hours. For fluffier youtiao, some recipes add a small amount of flour-water slurry or a pinch of alum, though traditionalists prefer just flour, salt, and yeast.

Next, shape the dough: Roll the rested dough into a long, thick log (about 2cm wide). Use a rolling pin to flatten it slightly (to 0.5cm thickness), then cut it lengthwise into two long strips. Stack one strip on top of the other and press gently to seal.

Finally, fry to perfection: Heat oil in a wok or deep pan to 180°C (350°F). Gently slide the dough into the oil, frying for 3–5 minutes, turning occasionally, until puffed and golden brown. Drain on paper towels to remove excess oil.

Serve hot with soy milk, congee, or as a side to dim sum. Variations include adding scallions, sesame, or sweet bean paste. With practice, you’ll achieve that perfect, airy crunch that makes youtiao irresistible!
