Zhajiang Noodles: A Culinary Guide

Zhajiang mian, a beloved Northern Chinese dish, combines savory soybean paste with fresh noodles for a hearty meal. Here’s a simple guide to crafting this classic.

Ingredients: For the sauce, you’ll need 200g ground pork (or chicken), 3 tablespoons fermented yellow soybean paste (zhajiang), 1 tablespoon doubanjiang (for spice, optional), 1 tofu cube (diced), 1 carrot (julienned), and 5 dried shiitake mushrooms (rehydrated and sliced). For serving, fresh wheat noodles, cucumber julienne, and bean sprouts are ideal.

Steps:

1. Prep: Soak mushrooms in hot water for 20 minutes. Julienne veggies and cook noodles according to package instructions until al dente. Rinse under cold water and set aside.

2. Sauté the sauce: Heat 2 tablespoons oil in a wok over medium heat. Add pork, breaking it up, until browned (5 mins). Stir in soybean paste and doubanjiang, cooking for 2 mins until fragrant.

3. Simmer: Add tofu, carrots, and mushrooms. Stir-fry for 3 mins, then add 2 tablespoons soy sauce, 1 teaspoon sugar, and ½ cup water. Simmer for 10 mins until thickened.

4. Serve: Toss noodles with the sauce. Top with cucumber, sprouts, and a drizzle of sesame oil.
