Shandika, or hawthorn candy, is a beloved Chinese snack loved for its sweet-tangy flavor and chewy texture. Making it at home is easy and requires just a few ingredients. Here’s a basic guide to get you started.
First, prepare 500g fresh hawthorn berries. Wash them thoroughly, remove the stems and seeds, then cut into halves or quarters. If fresh hawthorns are unavailable, 200g of dried hawth slices soaked in water can be used as a substitute.
Next, cook the hawthorns in a pot with 100ml water over medium heat. Simmer for 15-20 minutes, stirring occasionally, until the fruit softens and breaks down into a thick pulp. For extra sweetness, add 100-150g sugar (or honey to taste) and continue cooking until the mixture thickens and pulls away from the pot’s sides.
Once cooled slightly, blend the pulp until smooth. Pour the puree back into the pan and cook on low heat, stirring constantly, until it forms a thick, dough-like consistency (about 10-15 minutes). Spread the mixture onto a silicone-lined tray, roll into a 1cm-thick sheet, and let it cool completely.
Finally, cut the cooled sheet into strips, roll each strip into a small log, and wrap in parchment paper. Store in an airtight container for up to two weeks. Enjoy this traditional treat as a snack or dessert!
