A Comprehensive Guide to Making Mantou

Mantou, a staple Chinese steamed bun, is simple yet versatile. Here’s a step-by-step guide to mastering this fluffy delight.

Basic Ingredients: For 10-12 buns, you’ll need 500g all-purpose flour, 5g active dry yeast, 10g sugar, 250ml warm water (around 40°C), and a pinch of salt.

Step 1: Activate Yeast. Dissolve sugar and yeast in warm water. Let it sit for 5-10 minutes until frothy—this ensures the yeast is alive and ready to make the dough rise.

Step 2: Mix Dough. In a large bowl, combine flour and salt. Pour in the yeast mixture and stir until a shaggy dough forms. Knead on a floured surface for 10-15 minutes until smooth and elastic. Alternatively, use a dough hook for 5-7 minutes.

Step 3: First Rise. Place the dough in an oiled bowl, cover with a damp cloth, and let it rise in a warm spot for 1-2 hours, or until doubled in size.

Step 4: Shape Mantou. Punch down the dough to release air. Divide it into 12 equal portions. Roll each portion into a smooth ball, then place them on parchment paper, spaced apart. Cover and let them rise for another 30 minutes.

Step 5: Steam. Bring a steamer to high heat. Place the buns (leaving space for expansion) in the steamer basket. Steam for 15-20 minutes. Turn off heat and let them sit for 5 minutes before opening the lid to prevent deflation.

Variations: Add red bean paste or black sesame filling for sweet versions, or knead in cooked minced pork for savory ones. Enjoy plain, with soups, or stir-fries!
