How to Make Homemade Yogurt: A Simple Guide

Making yogurt at home is easy, cost-effective, and allows you to control ingredients. Here’s a basic method to get you started.

First, gather your supplies: 1 liter of fresh milk (whole or low-fat work best), 2-3 tablespoons of plain yogurt (with live active cultures as a starter), a saucepan, a thermometer, and an insulated container or yogurt maker.

Begin by heating the milk to 85°C (185°F) in the saucepan, stirring occasionally to prevent scorching. This step kills unwanted bacteria and helps the yogurt thicken. Let the milk cool to 43-46°C (110-115°F)—warm to the touch but not hot. If it’s too hot, it will kill the starter cultures.

Once cooled, whisk in the plain yogurt starter until fully dissolved. Pour the mixture into a clean, sterilized container (glass or ceramic works well). Cover it and incubate for 6-12 hours. For consistent heat, place the container in a yogurt maker, wrap it in a towel, or leave it in a warm oven with the light on. The longer it incubates, the tangier the yogurt will be.

After incubation, refrigerate the yogurt for at least 4 hours to set. For thicker yogurt, strain it through a cheesecloth for 1-2 hours. Add honey, fruit, or granola to taste before serving.

Homemade yogurt lasts up to two weeks in the fridge. Experiment with different milk types or starters to find your perfect texture and flavor!
